A light white wine from Tokaj PDO

Summary

The free run juice of Aszú berries is collected before they are used in the production of Tokaj Aszú. This juice is extremely concentrated and high in sugar content. Yeast struggle in this environment so they slowly ferment over a number of years and still only reach very low alcohol levels. The high acidity allows the wine to age as it slowly gains oxidative aromas.
