A light white wine from Savennières AOC

Summary

A crushed fruit fermentation wine, where hand-harvested, concentrated and heavily sorted grapes are crushed, then fermented in neutral vessels at moderate white fermentation temperatures, to retain aromatics but ensure fermentation to potentially high alcohol levels. Malolactic conversion is avoided and maturation usually occurs in neutral vessels, before any light fining, sterile filtration and bottling in glass under premium cork.
