Sancerre or Pouilly Fumé
(Very Good to Outstanding)
A light white wine from Pouilly-Fumé AOC or Sancerre AOC

Summary

A crushed fruit fermentation wine, often using skin contact for additional aromatic intensity, which is then fermented in stainless steel at mid-range temperatures to retain primary aromas but avoid pronounced esters. Malolactic conversion is usually avoided but maturation in older oak, often on fine lees and sometimes with lees stirring, is common. After light fining and filtration they are generally bottled in glass under premium cork.
