A light red wine from Rioja DOCa

Summary

A crushed fruit fermentation wine made with heavily sorted fruit. After a cold soaking to extract additional color, a warm fermentation will begin using cultured yeast in neutral vessels. Post-fermentation maceration on the skins is common to extract tannin and additional color. After pressing, wine is racked into barrel (225L a portion new of French oak, American oak or both) where malolactic conversion and maturation of at least 24 months occurs, adding oak flavors and texture, before blending, light fining, filtering, and bottling in glass commonly under cork. A total maturation time of 60 months is required before sale.
