Summary
A crushed fruit fermentation wine where tannin management is very important. The fruit is destemmed, cold soaked to extract color and crushed. Fermentation begins in neutral vessels at warm temperatures with pump overs and punch downs decreasing over time to limit tannin extraction. Post fermentation, wines have a short maceration on the skins (less than a week) before extended maturation in oak (up to 15 months, a portion new), blending, light fining, filtration and bottling in glass.
