Summary

A Crushed Fruit wine, made from ripe grapes that are destemmed and cold soaked for color extraction before being fermented in neutral vessels at warm red fermentation temperature, often with ambient yeast. Additional maceration on the skins for flavor extraction is common before ageing in oak (a portion new) before light fining, filtration, and bottling.
