A light white wine from Mâcon Villages

Summary

A crushed fruit fermentation wine, where machine-harvested and moderately sorted grapes are pressed quickly after harvest as whole bunches. The must is quickly clarified and may retain a moderate level of solids. Fermentation is often performed by cultured yeast at mid-range temperatures in neutral vessels (stainless steel or concrete are common) to retain primary fruit but avoid fruity esters associated with cooler temperatures. Wines (or a large portion of the wine) will go through malolactic conversion and then be aged on the lees, often with stirring, before maturation in oak (a small portion new), fining, filtration, and bottling in glass under cork.
