Summary
A crushed fruit fermentation of high-yield, destemmed grapes, that have had minimal sorting. Grapes are fermented neutral vessels, at mid-range temperature, using cultured yeast. Fermentation will be stopped short of dryness while the wine still retains at least 18 g/L of residual sugar. Malolactic fermentation is avoided and the wines are held in neutral vessels, before fining and sterile filtration and bottling in glass under screwcap.
