Summary
A crushed fruit fermentation wine, where hand-harvested (via successive passes) and heavily sorted grapes that have been dried on the vine (passerillage), are fermented by ambient yeast at mid-range temperatures in barrel. The must has a high percentage of sugar and is not fermented to dryness, leaving anywhere from 40-60g/L of residual sugar in the final wine. Malolactic fermentation is avoided for the purity of fruit aromatics and retained acidity. The wines are matured in barrel, accumulating maturation aromas before any light fining, sterile filtration, and bottling in glass under premium cork.
