A light white wine from
Hermitage AOC
Summary
A crushed fruit fermentation wine, where thoroughly sorted grapes are crushed, and left in contact with the skins briefly, adding complexity and aromatic intensity. The pressed juice is then fermented in large neutral vessels at mid-range temperatures, with optional lees stirring to add body and more complexity when desired. The resultant wine may forgo malolactic conversion to retain acidity but will undergo a period of barrel maturation before fining, filtration, bottling and release.
