Summary

Hand harvested and heavily sorted fruit is crushed and cold soaked for additional color extraction. A warm fermentation to dryness will then begin in neutral (often old oak) vessels with ambient years, followed by post-fermentation maceration. Maturation in large format neutral oak for one to four years is common, before any fining and filtering, if desired, and bottling.
