Summary

May be a crushed fruit fermentation wine or may undergo semi-carbonic fermentation. If crushed, the fruit undergoes a cool fermentation in stainless steel, followed by a short maceration. If semi-carbonic, the whole clusters undergo intracellular fermentation first, followed by traditional fermentation. A short maturation in a neutral vessel (often stainless steel) follows before fining, filtration, bottling and a quick release.
