A light white wine from Bonnezeaux AOC or Coteaux du Layon AOC

Summary

A crushed fruit fermentation wine, where hand-harvested (via successive passes) and heavily sorted botrytis affected grapes, along with grapes that underwent Passerillage, are destemmed and have skin contact time, before pressing when ambient yeast ferment the wine at mid-range temperatures in neutral vessels. The must has a high percentage of sugar and hence accumulates high alcohol before fermentation ceases, while still retaining significant residual sugar. Malolactic fermentation is avoided. The wines are matured in neutral vessels, accumulating maturation aromas before any light fining and sterile filtration and bottling in glass under premium cork.
