Summary

A crushed fruit fermentation wine, often having pre-fermentation skin contact before fermentation in stainless steel at cool temperatures by ambient yeast to retain intense primary aromas. Producers generally use very low levels of press pressure, or sometimes just free run juice, to ensure a low level of phenolics in the wine. Maturation usually occurs in neutral vessels, with some producers choosing to age on the lees for additional texture and weight but malolactic conversion is often avoided to retain the pure aromatics. Wines are fined, filtered, and bottled in glass with a screwcap closure.
