A light red wine from Bourgueil AOC or Chinon AOC

Summary

A crushed fruit fermentation wine, made with heavily sorted fruit, generally fermented by ambient yeast, at mid-range to warm temperatures in neutral vessels. Wine is made from at least 90% Cabernet Franc, with the rest made up by Cabernet Sauvignon. Post-fermentation maceration on the skins is common to extract tannin and additional color for up to 3 weeks. Wine will be racked into barrels, a portion new, where malolactic conversion will occur, and the wine will mature before blending, fining, filtering, and bottling. The wine will be released at least 2 years after harvest.
