Summary
A crushed fruit fermentation wine made of at least 80% Sangiovese. The fruit is first destemmed before fermentation in neutral vessels at warm temperatures. Post fermentation, wines may receive up to an additional 30 days of maceration on the skins. Riserva wines receive a minimum of two years of maturation before their release and, although there is no requirement for oak ageing, maturation in a portion of new oak is common.
