Summary
Heavily sorted fruit is fermented at cool temperatures in neutral vessels to retain primary fruit, although some producers choose to ferment in (a portion) new oak for stylistic reasons. Wines fermented in neutral vessels may undergo some lees ageing, with or without less stirring, and then mature for up to a year before stabilization, fining, filtering and bottling in market.
