A light white wine from Graves AOC or Pessac-Léognan

Summary

A crushed fruit fermentation wine, where thoroughly sorted grapes are crushed, and left in contact with the skins for as long as 24 hours, adding complexity and aromatic intensity. The pressed juice is then fermented in barrel at moderate temperatures, with optional lees stirring to add body and more complexity when desired. The resultant wine is unlikely to undergo malolactic conversion but will undergo a period of barrel maturation before release.
