Summary
May be a crushed fruit fermentation wine, or may undergo carbonic or semi-carbonic fermentation. If crushed, the fruit undergoes a cool fermentation in stainless steel, followed by a short maceration. If carbonic or semi-carbonic, the whole clusters undergo intracellular fermentation first, followed by traditional fermentation. A short maturation in a neutral vessel (often stainless steel) follows before release.
