Bairrada
(Good to Very Good)
A light red wine from Bairrada DOC

Summary

A crushed fruit fermentation wine where tannin management is very important. Ripe grapes are generally destemmed (with a portion whole cluster or stems added back) before being fermented in neutral vessels (stainless steel, concrete and even Lagares) at cool red fermentation temperature to retain aromatics. Maturation in large oak barrels, for complexity or large format oak for additional texture.
