Limoux AOC

Summary

Small appellation located in the Languedoc, located in the eastern Pyrenean foothills. Specialising in traditional method and Pét-Nat sparkling wines. Vineyard sites are at high elevations and are overall cooler, avoiding Mediterranean influences. Mature vines provide grapes for these styles. Traditionally, these wines would undergo a natural second fermentation during the spring when unfiltered yeast particles would awake from dormancy and begin re-fermenting inside the bottle. In 2005, a red wine appellation was added featuring blends that must have 50% Merlot in the final blend.
