Chinon AOC

Summary

Red, white and rosé wines are produced in this Touraine appellation, although it is best known for its highly regarded red wine production. 10% Cabernet Sauvignon is allowed in red and rosé styles. Early drinking red styles are made from grapes grown on sand and gravel soils and undergo a short maceration. Ageable styles are made from grapes grown on clay limestone soils, which promote slower ripening, and experience a longer maceration. These structured wines often involve two years of ageing before market release, and can age comfortably in the bottle for 20 years or longer.
