Chablis

Summary

Located in the Yonne department, this is the most northern area of Burgundy. White wines are dry, steely and age worthy. Famous for unique kimmeridgian soil made from fossilised seashells. Spring frost is a common issue, contributing to vintage variation, low yields and high production costs. The quality focused cooperative La Chablisienne is responsible for a 1/3 of total output from this area. ⅔ of total production is exported.
