Famous and broadly continental region focused on single varietal wines. This non-contiguous area comprises three départments, and includes the viticultural areas of Chablis, Côte d’Or, Côte Chalonnaise, and The Mâconnais. Monastic influence and documentation provided the foundation of terroir and the vineyard classifications which are still in place today. Distinct soil types, alongside aspect and slope are all considered when awarding status to climats. The Napoleonic code and its insistence for equal inheritance has left this region minutely parcelled, influencing the organisation of trade towards merchants, négociants and cooperatives.
